Sourced from a group of 32 neighboring producers in the municipalities of La Union and Cartago, Las Frutas undergoes an extended, double fermentation to achieve a fruit-forward profile while maintaining clarity and cleanliness in the cup. This lot is solely composed of Caturra trees producing above 1,800 meters above sea level. An initial 18-hour fermentation is done with the coffee cherries soaking intact with the skin and mucilage still on the seed. The seeds are then milled and fully washed to undergo a second 18-hour fermentation. We can celebrate the fruits of their labor by enjoying a cup of this beautiful, bright coffee.
